High-quality T5MoV stainless steel boning knife with molybdenum and vanadium additives that increase the life of the knife and make for a harder blade (54-56 HRC). It is intended for normal use in your home as well as professional uses. The knife is guaranteed to have a long lifetime if you avoid washing it in the dishwasher. We recommend hand washing with soap and water, then wiping dry with a cloth.
